If you can find someone else to co-admin, you just need to use your existing admin account to create a second account with admin-level access permissions, then give that account to the co-admin.
Masto.host takes daily backups as part of its hosting plans, so that's not an issue.
The "more than one person with access" doesn't mean the physical server hardware, it just means you need to have more than one person with admin-level access.
(It's basically trying to avoid a situation where an admin disappears and there's no one around to fix problems.)
There are browser extensions that allow this (which I linked to at https://fedi.tips/remote-following-on-mastodon/), but I don't know if this is technically possible on a web browser without extensions?
After you've installed the extension, just use the web as normal. Your browser will start noticing sites that have Mastodon accounts, and build up a list of these accounts to follow.
What should the redesign be, bearing in mind that you cannot use any centralised servers?
If you prefer commercial centralised social networks, there are plenty of them you can use instead. But centralised commercial social networks will invade your privacy, and manipulate your timeline in opaque and misleading ways, purely for their own benefit rather than the user's.

I'm really glad Eugen turned them down, it's a really good sign, but it is dangerous to build a network that relies on one person regularly turning down money.

That's the opposite of the truth.
The more a particular instance dominates the network, the harder it becomes to defederate from it because so many of the connections people have will lead to that server.

It's not just billionaires, it's also smaller scammy companies that take over open projects and start it with privacy-busting trackers etc. This has happened countless times and caused so many forks to happen.
