I can't think of any game that has full character editing as a simple menu option. They all have, as you said, clever solutions like potions and shit like that, that require in game resources. Character editing tends to be made more difficult for many reasons. Suspension of disbelief, the psychological stuff of players being more invested in their characters if they can't completely change it willy-nilly, or even for padding the games (making you replay the game if you want to change things makes it so "players play our games for more hours", which is good to show on internal spreadsheets. That's also a reason so many games make it so difficult to respec your character's attributes/skills/powers).
Capcom selling this solution as a MTX is the really scummy part (and preventing players to edit the save file themselves is the REALLY scummy part). But I assure you, that they only did it because they thought that they would make more money than the PR damage would be worth. And the only reason for them to think that would be by looking at spreadsheets of the sales of character editing vouchers in Dragon's Dogma 1 and the Monster Hunter titles and seeing that these items made a fuckton of money, because normies invaded and now gamers are even more stupid than they used to be.
That's the shitty part, and that's the blackpill: there is no solving that. It doesn't matter if you complain to the companies, they don't give a fuck because they are still selling a lot of this shit. It doesn't matter if you say you will "vote with your wallet", because for each one of us who don't buy this stuff, there are at least 10 subhuman mouthbreathers who will buy. All we can do now is support the games and companies we think deserve our support and hope that the whole industry implodes in a few years and 70% of the current AAA studios simply cease to exist, then maybe there will be a possibility for change.
@Cayhr@RehnSturm256@Meemoo@supersid333 but as far as I remember, every Monster Hunter ever had limited character editing. You can change your hair, maybe some tatoos/makeup, and that's about it. The other features you picked up when creating the character (gender, height, skin color, etc) are set in stone. I always thought of it as a design choice ("verisimilitude" is a really neat term that people, specially gamers, should learn), and always thought that they only added the character edit vouchers because people whined about it.

The NES, for instance, was only officially released in here in the mid 90`s, the 8 bit Nintendo console everyone played here in the 80's were the clones like the Phantom System and the Dynavision, that was the main reason of the first lawsuit the guy mentions. Those systems also had the advantage that they could accept both American and Japanese cartridges, because Nintendo was so shitty back then that they made different slots so you couldn't use Famicom games on a NES and vice-versa.
I remember in the 90s piracy of SNES and N64 cartridges was very common, and nothing was ever done about it. Nintendo kinda tried partnership with another company to release the Gamecube in here, but it was very short lived, and indeed, they only came back with official releases after the 3DS.
Thing about courts in here is that they aren't very litigious, and they are extremely anti companies, that's why Brazil is always in those "top countries hostile to business" lists. We have very strong consumer laws, and those consumer laws are one of the few things in this country that works fine. Companies know better than to mess with the "Consumer Defense Code", a lot of companies that get away with monopolistic or anti consumer practices in other countries (specially the USA) tend to get absolutely screwed in here, and they usually have to develop some special sets of rules to accomodate us. And so, whenever Nintendo tries to be litigious and sue for piracy bullshit, they tend to get absolutely screwed. This goes even harder for Nintendo because Nintendo doesn't have any plants in Brazil, and the government doesn`t like that, so every time they try to be litigious courts go against them.
