GIVE ME A GOOD MAYO RECIPE
Everyone says "oh hell yeah it's super simple just use some olive oil and eggs and whip them" but every recipe we've tried doesn't have any good taste to it. I've tried them all, lemons, EVOO, diff. concentrations of yolks, pickle juices, none of them have been good enough to make a second time. I think we've done at least 5, maybe 8 different attempts, they all come out mediocre.
I'm only gonna buy "it's easy" from the guy who's been doing the same recipe for 20 years, because I think everyone is just pretending to make their own!

  @PhilSchedia @Orkin_Awk @PopulistRight @TeaTootler @catmanmancat @sickburnbro I've tried 2 diff. olive oil ones, the old boomers say canola oil is a good base but that seems counterproductive to something tasting good (and it's nasty, tried it 1x)
  Every time I say one is nasty the goalpost is moved, like "oh wrong olive oil"

  That's how this all goes, at every turn, each attempt I'm told "uh actually it's better if you buy {expensive, boutique ingredient}
  Really makes it counterproductive if each jar ends up costing 8 bucks, y'know? I just want to find ONE guy actively making mayo all the time w/ a tried, true recipe that works

  All the little tricks of mustards, pickle juices, vinegars don't seem to appreciably mask it either

  however i'm off the opinion mayo should be a subtle note compared to anything it is on and more for adding moisture and depth of flavor

Nobody cares about it that much, but my bar for cooking is having people notice it, because truly good things will pop

  Use less oil and more mustard than what the recipe calls for.

  Hence my irritation w/ "dude it's easy just eggs & oil, it's amazing"
