No, they won't be notified. But you can only add accounts that you follow, so if they wanted to prevent being on your list they could block you.

The Lists interface is a bit confusing, hopefully the guide makes it a bit clearer.
In short, go to the person's profile page, click on ๏ธ and then "add or remove from lists".

Yeah, there is (currently) no system for adding alt text directly to banners or profile images. People have worked around this by describing them in their profile texts, but this isn't ideal either as the character limit is quite low there.
(Guessing this is possibly due to old web guidelines saying no alt texts on "decorative" images...)

Yeah, I think that was the idea of this interface. Unfortunately most people don't notice this is even an option, perhaps because they're unlikely to be involved with web development?
It's one of the most hidden features! Mastodon ought to use a more obvious interface really...
The third party apps that support this option tend to do it better, for example with dropdown menus below the poll when you're creating it.
By default Mastodon polls only allow people to select one option. However, you can also allow multiple selections.
If you're using your server's website:
1. Write your post and poll as normal, but do not post it yet
2. Click on the circles next to the options, they will change into squares, and if you click again they turn back into circles
3. Use circles if you want a poll where people select one option, use squares for selecting multiple options.

PeerTube runs an official index at https://sepiasearch.org based on a blocklist (so it lists everything unless someone reports it as unsuitable).
I run a search index at https://fedi.video based on an allowlist (so it only lists accounts I've curated as not containing bad stuff).
Sepiasearch has more results but lower quality, fedi.video has fewer results but higher quality.

Yes, opt-in full text search is an option since 4.2.0 ๐
However, your server needs to have ElasticSearch activated for the full text search to work. Ask your server admin about this if you're not sure.
Bear in mind that the hiding-posts-on-lists is brand new and only introduced in 4.2.0 so there may be situations like this that still need work.
I can't find any existing issue on Mastodon's github, but if you're comfortable using github you could set up an issue for this situation? (at https://github.com/mastodon/mastodon/issues)

I think it's one of those situations where it depends on what priority conflicting settings should take. Different people will have different priorities.
Someone who wants to hide the listed person's posts *except* the ones with the followed hashtag would see it as broken if it didn't do things the current way.
Ideally there would be some kind of advanced settings for hashtag following so that both ways are possible.

There's no collation at the moment, but one workaround might be to adjust what your notifications show you?
If you're using the website you can adjust what you get notified about by going to the Notifications section and clicking the slider icon in the top right corner.
If you're using the official app or third party apps you can do this through their โ๏ธ Settings / Preferences section.

Have you noticed an eye icon ๐๏ธ in the top right corner of Mastodon threads? Do you wonder what this does?
It's actually a really useful feature:
If you're browsing a thread that contains posts hidden by Content Warnings (CWs), you can click the eye to toggle them all open or closed. This saves you having to open each post one by one.
(The eye is still there even if there aren't any CW posts, but it will do nothing.)
