@foone what are you wanting to output from them? they have hardware decoders for a bunch of codecs. I vaguely recall MPEG2 and VC1 need a licence code (or other means) but MPEG4 was standard. Later Pi's don't have MPEG2 or VC1 at all.

If you're wanting lossless - yeah, Huffyuv is probably the way to go. but you'll have a YUV -> RGB -> YUV conversion which might introduce some quality loss.

@foone yeah, the 3 puts the audio and video onto a 3.5mm TRRS jack, you need an old 90s camcorder AV cable to break it out. Or you could solder to the board if you didn't have one.
The 1B and 2B had a yellow RCA jack for composite and a 3.5mm TRS for audio.
fair warning, the composite out defaults to PAL, you'll want to mod the config.txt to force NTSC and forcibly enable composite.

@foone Speaking from experience? A Raspberry Pi 1 or 2 with an RCA composite and 3.5mm-to-RCA cable, or a 3 with a TRRS-to-RCA

I didn't think this was going to arrive today but it has - a TI Silent 700 Model 709 KSR printing terminal, with the acoustic coupler. Sadly it doesn't do RS232, so I'm going on a deep dive into it...

@foone I mean it's terrible if you store data directly, but if you can store a calibration burst and a Reed-Solomon ECC alongside, it might just work...
... though 256 levels might be a bit too much, even MLC flash is limited to four levels so far.

@artandtechnic These days I think we should be looking at the Domesday86 VHS-Decode software as the gold standard for that, or CX88 ADC-mode capture as a reasonable stand-in for when a modified deck isn't available.
I fully agree on capturing the VBI (Line 21 captions and Teletext) data. There's a treasure trove of history in those.

The cardinal #digipres sin, the one that'll make preservationists scream:

"We tested the {tape/disc} in a machine so we didn't waste time making an image if it was bad. After playing the game for a few hours we found we couldn't load the tape again."

Lesson here is, take the image first, you can always write it back to a new tape, but that one read may be your only chance...
