Olive oil and butter are good at low temps, but their smoke points are only 160 °C (highly unsaturated) and 150 °C (due to protein), which makes it bad at higher temperatures.
Coconut oil is better, you have 15 °C more leeway. I'm trying it out right now. Great taste.
What about deep frying (high temps)?
You don't ever have to do any deep frying. Put it in the oven / air fryer!
