    juice 6 lemons
    macerate the zest in 1 1/2 cup of sugar overnight.
    boil 1 qt of water, pour it on the zest/sugar mix, co er and let cool to room temp.
    add lemon juice to zest/sugar water.
    funnel into a gallon container staining out the zest.
    top off gallon jug with water.
    add zest if desired.
