I think I need to cut it thinner. I'm also going to smoke some.

@Sabex Been making bacon for over 10 years. Cannot stress enough how much a meat slicer will improve your product.
@ChefsCatch I totally agree. This is a great first attempt and will justify the cost of a bacon slicer I think
@Sabex Yeah there is no comparison to shop bought bacon. If it helps, this is the cure recipe for our basic product.
450g pure salt
115g raw sugar
115g of brown sugar
53g sodium nitrite (cure #1 6.25%)
