The problem here is readability and the uninterrupted combo string, this frustrates people more than being oneshot by a boss.
Ninja Gaiden bosses can oneshot you and unless the camera is sperging out, it's fair because it's readable and you're able to learn from it, also the boss combo string doesn't take 5 minutes to finish.
DMC's later entries has a difficulty option to be killed in oneshot from both enemies and bosses, because everything is readable it's fair and again boss combo strings don't go on and on for 5 minutes.
Majority of the problems come from the art direction, everything kind of blurs in to a grey mush. NG and DMC at least attempt to make the boss easy to see and follow.
Nobeta ironically excels at this better than souls, the color contrast between the boss design and the arena the boss is in makes the boss easily readable so even if you do get oneshot it feels fairer since the telegraphs are more obvious.
