They cooked and ate their flesh, and turned their skin into leather clothing. The legions eventually were able to put the revolt down. Soon after though there was another jewish revolt where they killed all non jews, especially going after women and children, in Jerusalem and surrounding area, killing tens of thousands. That's when Hadrian said ok that is enough and BTFO'd them so hard Jerusalem was never again a center for jews until modern Israel
jews are still butthurt about it because Wikipedia lists all jewish casualty counts for these events right front and center at the top of the page, but the roman casualties especially civilian ones are either buried, not listed, or split up by province to look smaller
