     @thor @k1tteh I tried multitasking to make some brunost the other day while at work and just wanted 2 gallons of whey because the temp was too low (I wasn't watching constantly and was afraid it'd burn).
     
     Lesson: cheese making is a dedicated block of time.

     @k1tteh sometimes, i will add this to sauces to give them body and thicken them. brunost. Norwegian whey cheese. it kind of tastes like it looks. sweet, salty, creamy. thickens up sauces nicely.

     I thought I might be able to get away with checking on it periodically but it should be supervised more regularly than I could.

     @thor @k1tteh the first time I made it I was floored. The flavor is similar to cheddar. What I ended up with was softer but still quite nice. I tried making it with sweet whey but that turned into a chalky substance that tasted good but was nothing like the brunost from acid whey.
