Usually in the oven the honey doesn't even caramelize all that much, and there isn't much blending of flavors. With this I ended up with a glaze that tasted like it's own unique thing (not just salty honey). The cast iron was a mess afterwards and I was worried I'd struggle getting it clean but it was surprisingly easy to clean up. -
