@mushroom_soup I think much of that is the industrialization of farming. Pouring oil on food to make it get big may make more food available but I suspect heirloom plants grown using organic methods are more nutrient dense even if the yield by weight is less.

exactly. nutrient dense food comes from healthy soil, which modern farming destroys in the interest of higher yields/profits.
similar thing happened with meat, it was more profitable to raise animals on grain, stuffed in feedlots, but the nutrition of the meat is much worse.
