The hallmark of Indian cuisine isn't just spices. It's the use of fats. Notably... animal based fats like ghee. Ghee has a high-smoke point that most pre-industrial plant-based fats can't reach. It also contributes a wonderful mouthfeel and flavour. Not to mention the unique nutritional benefit of animal based fats.
Dairy has always been an essential component of Indian cuisine.-

Ghee for clarifying, coating a pan or rubbing down a kebab even in middle eastern cuisine. Ghee and suet. Rice bran for same reason, high smoke point when deep frying. -
