The potato probably could have stayed on the skillet a little longer, but they were only slightly more firm that I would have preferred. Otherwise absolutely delicious.
I did have to cut a small spot of green off the top of the potato. I assume I didn't have enough hay on top of the tubers for a time which caused it to start turning green. -

Chard is technically a beat, but I have never known anyone to actually eat the root. Mostly it's grown for the greens. I like them (and other beat greens) a lot more than beats themselves.
You do want to cook the stalks a little longer than the leaves, and if they are really big leaves even cut it out of the middle. The greens cook up very quickly.
Right now we only have 2 chard that have harvest ready greens, but I have half a tray of seedlings that I will be planting in the next week or so. They are a cut and come again type crop so as long as you don't take all the leaves they usually recover and can be harvested from every few weeks. -

We have a couple potatoes in the fridge already so I didn't pick more yet, but it was a good size. Perhaps slightly smaller than a tennis ball. I think I might have needed a bit more hay in the earlier stages because the top was a little bit green, but I am excited to pick more once we go through what we have already. I hadn't actually considered harvesting as needed, but I love being able to leave food on the plant instead of having to store it. I might be able to take a few and actually plant a new crop for fall harvest too -

We are still running the house with open windows for another week or two before we will have to turn the AC on. -

I was reading that storing them with fruit could trigger the starches to start converting to sugars which I'd rather avoid. I don't usually keep them in there long, but maybe I should pay better attention when I am putting the produce away :shrug: -
