Ackshually there are ISA-extended risc-v GPUs and NPUs now...
I went through a rabbit hole of this architecture. There's designs for putting risc-v for gpu, putting gpu into risc-v cores, and spacemit K1 (used in bpi-f3 SBC and upcoming laptop(s)) does the latter but with NPU, which is really interesting.
Mostly because it might be easier to utilize in a hobby os.
Maybe I'll buy that board...
