  @gentooP Just outside my room I'm building a setup to do exactly that (and also play some older games on)
  
  Trouble is I need to learn music theory, my keyboard's interface, and the DAW I want to use all at once and that will be a gargantuan task

  @Cocoa You can use any daw. I use Studio one because that came with Miku-chan.
  Keyboard doesn't really have interfaces, and you don't absolutely need one to make music it's a helpful aid though.
  Also Scalar 2 is a software to help people with little music theory make music, although they don't really have Eastern music preset only Western pianist chords. For beginner with no money link
