@arstechnica if we are to settle Outer Space it's imperative we develop cheese but without the cow. You can build a civilisation without cheese but it will resent you for it....
@arstechnica in my personal experience oat milk is the only worthwhile substitute. Almond milk is not appetizing and certainly not the most sustainable choice. With that said I enjoy real dairy, but have at least cut down a bit.
