sometimes i've taken jobs in low quality places because i just needed a job at the time. i actually just put in my notice at one. i do like the active nature of the job and making things that people enjoy and just being around food and tasting things constantly, and when you are in a good kitchen it can be very pleasant. i fucking hate a lot of the customers though, the attitude about 'i get to customize anything i order because i can afford to pay 27 dollars for an entree' seems to get worse and worse year by year. and yes we should aspire to make the customer happy but it's almost at the point where why do we even write a menu instead of just having a list of ingredients...actually this happened at a (((private))) club i was at, the sous and the exec decided before the season started that they were just going to offer proteins with choices of sides. they offered entree specials on fri-sat nights and i seriously think every time we sold one of them it had some kind of substitution on it. there are some people who can't seem to just pick an item off the menu without having to tweak something about it. places like starbucks and chipotle cater to this kind of nonsense and honestly i don't see the trend stopping any time soon.
oh btw working in kitchens is a big reason why i'm a fascist.
